2006 Richebourg for your PINOT NOIR education
The area of Burgundy that this wondrous wine comes from is the Nuit St. George region of Cote D’or. This is part of the reason that we treasure this wine, for the area makes some of the best Pinot Noir wines in the World.
This winemaker is particularly special to us, though, because Thibaut Liger-Belair uses biodynamic growing practices to yield a wine that is amazing. We suggest that you
open this bottle at the beginning of the meal, because the wine in this bottle will open up over the course of a half hour to an hour to an extent that is incredible. The Grand Cru version of this wine will be even more spectacular with a few years in the cellar, but if it is opened now, as it was last night, it would be wise to plan ahead. We paired the wine with some slow small plates and some business talk and over the course of the evening the wine changed and showed complex nuance filled enigmatic riddles of taste and smell. The Black Olive cellars their wines perfectly and so the first pour will be a few degrees below room temperature. By the time the air and the temperature had fully done its tricks, this wine glittered and jumped like a virtuoso dance performance concentrated enough to be done on the tongue.
